Coriander seeds can be found in almost every cuisine in the world. Used in Scandinavia in pickles and to flavour spirits like Aquavit, Moroccan tagines and Middle Eastern spice mixes. Our Indian coriander seeds are oval and pale in colour and have a lovely fresh lemony aroma and sweet nutty taste. Said to be good for the digestion, they are also a substantial source of iron and magnesium. They define Afelia, the classic Cypriot stew, made with pork and coriander seeds and are often sprinkled on grilled or fried halloumi cheese with a squeeze of lemon and drizzle of olive oil. Add them to an Indian curry or a slow-cooked ratatouille or try grinding together with crushed mustard seeds and other spices to create a wonderful crust on grilled meats and fish.
